Prepare the Gelatin

Soak the gelatin sheets in cold water for about 5-10 minutes until soft. Drain and set aside.

Cook the Apples

In a saucepan, melt the butter over medium heat. Add the thinly sliced apples, salt, and ground cinnamon. Cook until the apples are tender and caramelized, about 10 minutes.

Blend the Cheese

In a mixing bowl, combine the fior di latte cheese with the maple syrup. Use a hand mixer to blend until smooth and creamy.

Incorporate Gelatin

Gently warm the gelatin in a small saucepan with a tablespoon of water until dissolved. Stir into the cheese mixture until fully incorporated.

Layer the Terrine

In a terrine mold or loaf pan, layer half of the caramelized apples at the bottom. Pour half of the cheese mixture over the apples. Repeat with the remaining apples and cheese mixture, finishing with the cheese on top.

Chill

Cover the terrine with plastic wrap and refrigerate for at least 4 hours or until set.

Serve

Once set, carefully invert the terrine onto a serving platter. Top with toasted pine nuts and drizzle with maple syrup before serving.
