    Prepare Lemongrass

    Using a knife, cut the lemongrass stalks into 2-3 inch pieces and bruise them with the flat side of the knife to release their aroma.

    Prepare Galangal

    Slice the galangal into thin rounds. If galangal is not available, use fresh ginger as a substitute.

    Prepare Mushrooms

    Clean the mushrooms with a damp cloth and slice them into thin pieces.

Cooking

    Simmer the Broth

    In a large pot, bring the chicken or vegetable broth to a boil over medium heat.

    Add Aromatics

    Add the prepared lemongrass, kaffir lime leaves, and sliced galangal to the boiling broth. Reduce heat and let it simmer for about 10 minutes to infuse the flavors.

    Add Mushrooms and Chili Paste

    Add the sliced mushrooms and chili paste to the pot, stirring to combine. Continue simmering for another 5 minutes until the mushrooms are tender.

    Season the Soup

    Stir in the fish sauce, lime juice, and sugar. Adjust the seasoning to taste, adding more fish sauce or lime juice if desired.

    Serve

    Remove the pot from heat. Ladle the soup into bowls and garnish with fresh cilantro and sliced bird's eye chili if using.
