Preparation

    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Seafood

    Rinse the prawns, scallops, green mussels, and squid under cold water. Pat dry with paper towels and set aside.

    Chop Vegetables

    Slice the bell pepper, zucchini, and cut the green beans into 2-inch pieces. Rinse the bamboo shoots and set all vegetables aside.

Cooking the Curry

    Make the Curry Sauce

    In a large pan over medium heat, combine coconut milk and green curry paste. Stir well until the paste is fully dissolved into the coconut milk.

    Add the Seafood

    Add the prepared seafood (prawns, scallops, green mussels, squid) into the pan. Cook for about 5 minutes or until the seafood is cooked through.

    Incorporate Vegetables

    Add the sliced bell pepper, green beans, bamboo shoots, and zucchini to the pan. Stir well and cook for an additional 5 minutes until the vegetables are tender.

    Season the Sauce

    Add fish sauce and sugar to the curry. Stir to combine and adjust the seasoning to taste. If needed, add more fish sauce or sugar.

Combining and Serving

    Combine Spaghetti with Curry

    Add the drained spaghetti to the curry sauce and toss gently to coat the pasta evenly with the sauce.

    Garnish and Serve

    Remove from heat and stir in fresh basil leaves. Serve hot in bowls and enjoy your Spaghetti Green Curry!
