Preparation of Beef Short Ribs

In a large bowl, combine soy sauce, fish sauce, brown sugar, minced garlic, black pepper, coriander powder, minced Thai chili, and lime juice. Mix well until the sugar is dissolved.

Add Ribs to Marinade
Add the beef short ribs to the marinade, ensuring they are completely covered. Cover and refrigerate for at least 2 hours, preferably overnight.

Mix Ingredients for Dipping Sauce
In a small bowl, combine tamarind paste, fish sauce, brown sugar, minced Thai chili, lime juice, and roasted rice powder. Stir until well mixed and set aside.
Salad Preparation

Prepare Salad Ingredients
In a serving bowl, combine sliced cucumber, sliced red onion, chopped tomato, and chopped fresh cilantro. Toss well to combine.
Grilling the Ribs

Preheat the Grill
Preheat your grill to medium-high heat.

Remove the beef ribs from the marinade and shake off excess. Grill the ribs for about 4-5 minutes on each side, or until they reach your desired level of doneness.
