Prepare Pumpkin
Peel and dice the pumpkin into small cubes. Measure out 2 cups.

Prepare Bell Pepper
Chop the red bell pepper into bite-sized pieces.

Heat Oil
In a large pan, heat the vegetable oil over medium heat.

Sauté Onion
Add the chopped onion and sauté for about 5 minutes until translucent.

Add Garlic and Ginger
Add minced garlic and grated ginger and sauté for an additional 1-2 minutes until fragrant.

Incorporate Curry Paste
Stir in the red curry paste and cook for another minute.

Combine Vegetables
Add the diced pumpkin and red bell pepper to the pan, stirring well to combine.

Add Coconut Milk
Pour in the coconut milk and stir in salt and black pepper. Bring to a simmer.

Cook Curry
Cover and cook for about 15-20 minutes, or until the pumpkin is tender.

Once cooked, stir in the sweet basil leaves and simmer for another 2-3 minutes.
