Method

Preparation

  1. 1

    Prepare the Vegetables

Wash and chop the broccoli, slice the carrot and bell pepper, and prepare the snap peas.

  2. 2

    Marinate the Chicken

Slice the chicken breast into thin strips. Season with salt and black pepper. Set aside.

Cooking

  1. 3

    Cook the Vegetables

In a large pot, bring water to a boil. Add the prepared vegetables and steam for about 5-7 minutes until they are tender but still crisp. Remove from heat and set aside.

  2. 4

    Sauté the Chicken

In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken and sauté for 5-7 minutes until fully cooked and golden brown. Add minced garlic and sauté for an additional minute.

  3. 5

    Make the Peanut Sauce

In a medium bowl, whisk together peanut butter, soy sauce, honey, and water until smooth. Adjust the consistency with more water if needed.

  4. 6

    Combine Everything

Once the chicken is cooked, reduce the heat to low and pour the peanut sauce over the chicken. Stir to coat the chicken evenly in the sauce.

Serving

  1. 7

    Plate the Dish

On a large serving plate, create a bed using the steamed vegetables. Top with the sautéed chicken and peanut sauce mixture. Serve warm.
