Soak the Noodles
Soak the flat rice noodles in warm water for about 30 minutes or until pliable. Drain and set aside.

Prepare the Vegetables
Wash and chop the Chinese broccoli, broccoli, and julienne the carrot. Set aside.

Mix the Sauce
In a small bowl, combine the sweet soy sauce, soy sauce, oyster sauce, and sugar. Stir well until the sugar is dissolved.

Fry the Garlic
Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and stir-fry for about 30 seconds until fragrant.

Add the Noodles
Push the vegetables to one side of the skillet and add the soaked flat rice noodles to the other side. Pour the sauce over the noodles and toss everything together gently.

Scramble the Eggs
Push the noodle and vegetable mixture to one side of the skillet. Add 1 tablespoon of vegetable oil and crack the eggs into the skillet. Scramble until just set, then mix with the noodle and vegetable mixture.

Season and Serve
Season with salt and black pepper to taste. Stir everything together and cook for an additional minute. Serve hot.
