Prepare the Ingredients
Wash and trim the green beans, cutting them into 2-inch pieces. Slice the red and yellow bell peppers into thin strips. Finely chop the shallots and mince the garlic cloves. If using tofu, press and cube it, or if using chicken, slice it into bite-sized pieces.

Sauté the Aromatics
In a large skillet or wok, heat 1 tablespoon of oil over medium heat. Add the chopped shallots and minced garlic. Sauté for about 2-3 minutes until fragrant and the shallots are translucent.

Add the Protein
If using tofu or chicken, add it to the skillet and cook for about 5-7 minutes until browned and cooked through. Stir occasionally to ensure even cooking.

Cook the Vegetables
Add the green beans and bell peppers to the skillet. Stir-fry for about 4-5 minutes until they are slightly tender but still crisp.

Incorporate the Sauce
Add the red curry paste, coconut milk, soy sauce, and brown sugar to the skillet. Stir well to combine all the ingredients. Bring the mixture to a gentle simmer and cook for an additional 3-4 minutes, allowing the flavors to meld.

Remove the skillet from heat. Stir in fresh basil leaves. Serve hot with lime wedges on the side for squeezing over the dish.
