Preparation

Prepare the Protein
If using chicken, cut the chicken breast into bite-sized pieces. If using prawns, ensure they are peeled and deveined.

Prepare the Vegetables
Slice the onion and bell pepper into thin strips.

Mix the Sauce
In a small bowl, combine soy sauce, oyster sauce, brown sugar, chili paste, cornstarch, and water. Mix well until the sugar and cornstarch are dissolved.

Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat.

Cook the Protein
Add the chicken or prawns to the skillet and sauté until they are cooked through and crispy, about 5-7 minutes.

Add the Sauce
Pour the prepared sauce over the protein and vegetables. Stir well to coat everything evenly and cook for an additional 2-3 minutes until the sauce thickens.

Add the Cashews
Stir in the cashew nuts and cook for another minute to heat them through.
Serving

Garnish and Serve
Remove from heat, garnish with chopped cilantro, and serve hot over rice or noodles.
