Preparation

    Prepare the Vegetables

    Peel and dice the potatoes and carrot into bite-sized pieces. Finely chop the onion, garlic, and ginger.

    Roast the Peanuts

    If using raw peanuts, roast them in a dry pan over medium heat until golden brown, then let them cool and roughly chop.

Cooking the Curry

    Sauté Aromatics

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.

    Add Curry Paste

    Stir in the red curry paste and cook for an additional 2-3 minutes until fragrant.

    Add Coconut Milk and Tamarind

    Pour in the coconut milk and add the tamarind paste. Stir well to combine.

    Incorporate Vegetables

    Add the diced potatoes and carrots to the pot. Bring the mixture to a simmer.

    Season the Curry

    Add salt and black pepper. Let the curry simmer for 20-25 minutes, or until the vegetables are tender.

    Finish with Peanuts

    Stir in the chopped roasted peanuts just before serving.

Serving

    Ladle the curry into bowls and garnish with fresh cilantro. Serve hot with rice or bread.
