Soak the flat rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

Chop the Vegetables
Finely chop the green onions and set aside.

In a small bowl, mix together the soy sauce, oyster sauce, and sugar until the sugar is dissolved.

Stir-fry the Noodles
In a large wok or frying pan, heat the vegetable oil over medium-high heat. Add the soaked noodles and stir-fry for 2-3 minutes until heated through.

Incorporate Vegetables
Add the bean sprouts and chopped green onions to the pan. Stir-fry for another 2 minutes until the vegetables are slightly tender but still crisp.

Add the Sauce
Pour the prepared sauce over the noodle mixture. Stir-fry for an additional 1-2 minutes, ensuring everything is well combined and heated through.
Serving

Plate the Dish
Transfer the stir-fried noodles to a serving plate. Top with crushed peanuts and sprinkle chili flakes to taste.
