Preparation

    Prepare the Noodles

    Soak the flat rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

    Chop the Vegetables

    Finely chop the green onions and set aside.

    Prepare the Sauce

    In a small bowl, mix together the soy sauce, oyster sauce, and sugar until the sugar is dissolved.

Cooking

    Stir-fry the Noodles

    In a large wok or frying pan, heat the vegetable oil over medium-high heat. Add the soaked noodles and stir-fry for 2-3 minutes until heated through.

    Add the Eggs

    Push the noodles to one side of the pan and crack the eggs into the empty side. Scramble the eggs until fully cooked, then mix with the noodles.

    Incorporate Vegetables

    Add the bean sprouts and chopped green onions to the pan. Stir-fry for another 2 minutes until the vegetables are slightly tender but still crisp.

    Add the Sauce

    Pour the prepared sauce over the noodle mixture. Stir-fry for an additional 1-2 minutes, ensuring everything is well combined and heated through.

Serving

    Plate the Dish

    Transfer the stir-fried noodles to a serving plate. Top with crushed peanuts and sprinkle chili flakes to taste.

    Serve with lime wedges on the side for squeezing over the dish before eating.
