Method
Marinated Chicken Preparation
- 1
Prepare the Marinade
In a bowl, combine soy sauce, lime juice, fish sauce, brown sugar, minced garlic, chopped cilantro, chopped basil, and chili flakes. Mix well until the sugar dissolves.
- 2
Marinate the Chicken
Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 4 hours for better flavor).
Grilling the Chicken
- 3
- 4
Grill the Chicken
Remove chicken from marinade and discard the leftover marinade. Place chicken on the grill and cook for about 6-7 minutes on each side or until internal temperature reaches 165°F (75°C).
- 5
Rest the Chicken
Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing.
Sweet and Sour Sauce Preparation
- 6
Combine Ingredients
In a saucepan over medium heat, combine sugar, white vinegar, ketchup, soy sauce, cornstarch, and water. Stir until well combined.
- 7
Cook the Sauce
Bring the mixture to a boil, then reduce heat and simmer for 5-7 minutes, stirring occasionally until the sauce thickens.
Fresh Green Salad Preparation
- 8
Prepare the Salad
In a large bowl, combine mixed greens, cherry tomatoes, sliced cucumber, and thinly sliced red onion.
- 9
Dress the Salad
Drizzle olive oil and lemon juice over the salad. Season with salt and pepper to taste. Toss gently to combine.
