Prepare the Filling

Soak the Silver Noodles
In a bowl, soak the silver noodles in hot water for about 15 minutes until they are soft. Drain and cut them into smaller pieces.

Assemble the Spring Rolls

Prepare the Wrappers
Lay a spring roll wrapper on a clean surface with one corner facing you. Spoon about 2 tablespoons of the filling onto the wrapper. Fold the corner closest to you over the filling, then fold in the sides and roll tightly. Seal the edge with cornstarch mixed with a bit of water.

Repeat the process with the remaining wrappers and filling.
Fry the Spring Rolls

Heat the Oil
In a deep frying pan or wok, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Spring Rolls
Carefully add the spring rolls in batches, frying them until they are golden brown and crispy, about 3-4 minutes each side. Use a slotted spoon to remove them and drain on paper towels.
