Chicken Satay Marinade

Method

Marinating the Chicken

    Prepare the Marinade

    In a mixing bowl, combine soy sauce, peanut butter, coconut milk, brown sugar, minced garlic, grated ginger, lime juice, and cayenne pepper. Mix well until smooth.

    Marinate the Chicken

    Add the sliced chicken breast to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour, preferably overnight for better flavor.

Preparing Cucumber Salad

    Mix Salad Ingredients

    In a bowl, combine the thinly sliced cucumber and red onion.

    Make the Dressing

    In a separate small bowl, whisk together rice vinegar, sugar, and salt until the sugar dissolves.

    Combine Salad and Dressing

    Pour the dressing over the cucumber and onion mixture. Toss to combine and garnish with chopped cilantro. Set aside to marinate.

Making Peanut Sauce

    Combine Ingredients

    In a small saucepan over low heat, combine peanut butter, soy sauce, lime juice, water, sugar, minced garlic, and cayenne pepper.

    Heat the Sauce

    Stir the mixture until smooth and heated through. Adjust seasoning with more cayenne pepper if desired. Remove from heat and set aside.

Grilling Chicken Satay

    Prepare Skewers

    Pre-soak wooden skewers in water for 30 minutes to prevent burning. If using metal skewers, they can be used directly.

    Skewering the Chicken

    Thread marinated chicken pieces onto the skewers, leaving some space between each piece.

    Preheat the grill to medium-high heat. Grill the skewers for about 5-7 minutes on each side or until the chicken is cooked through and has grill marks.
