    Prepare the Crepe Batter

    In a mixing bowl, whisk together the flour, milk, eggs, melted butter, vanilla extract, and a pinch of salt until smooth. Let the batter rest for at least 30 minutes.

    Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour about 1/4 cup of batter into the center of the skillet and swirl to spread evenly. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute. Repeat until all batter is used.

    Make the Filling

    In a medium bowl, combine the cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.

    Prepare the Strawberries

    In a small bowl, combine the sliced strawberries, sugar, and lemon juice. Mix gently and let sit for about 10 minutes to allow the strawberries to release their juices.

Assembly

    Stuff the Crepes

    Place a crepe on a plate, add a generous spoonful of the cream cheese filling in the center, and fold the crepe over the filling. Repeat with the remaining crepes.

    Top the stuffed crepes with the macerated strawberries and their juices. Optionally, sprinkle with additional powdered sugar before serving.
