Method

Steak Preparation

  1. 1

    Season the Steaks

Sprinkle both sides of the cube steaks with salt, black pepper, and garlic powder. Let them sit for about 10 minutes to absorb the flavors.

  2. 2

    Dredge in Buttermilk

Pour the buttermilk into a shallow bowl. Dip each cube steak into the buttermilk, ensuring both sides are well-coated.

  3. 3

    Coat with Flour

In another shallow bowl, add 1 cup of all-purpose flour. Take each buttermilk-coated steak and dredge it in the flour, pressing down gently to adhere the flour to the meat.

  4. 4

    Heat Oil

In a large skillet, heat 2 cups of cooking oil over medium-high heat. The oil should be hot enough that a pinch of flour sizzles when dropped in.

  5. 5

    Fry the Steaks

Carefully add the coated steaks to the hot oil. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

Gravy Preparation

  1. 6

    Make the Roux

In the same skillet used for frying the steaks (leave about 2 tablespoons of oil), add 1/4 cup of all-purpose flour. Stir continuously over medium heat until the mixture turns golden brown, about 2-3 minutes.

  2. 7

    Add Broth

Slowly whisk in 2 cups of beef broth, ensuring there are no lumps. Continue to whisk until the gravy is smooth and thickened, about 5-7 minutes.

  3. 8

    Season the Gravy

Add salt and black pepper to taste, stirring to combine. Let the gravy simmer for another minute before removing from heat.
