    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk together until well mixed.

    Combine Wet Ingredients

    In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth and combined.

    Combine Mixtures

    Pour the wet ingredients into the bowl with the dry ingredients. Gently mix until just combined; do not overmix. The batter should be lumpy.

    Preheat Pan

    Heat a non-stick skillet or griddle over medium heat. Optionally, lightly grease with butter or cooking spray.

    Cook Pancakes

    Using a ladle or measuring cup, pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 2 minutes, or until golden brown.

    Serve

    Remove pancakes from the skillet and keep warm. Serve immediately with your choice of syrup, butter, or toppings.
