Preparing the Pork Tenderloin

Prepare the Pork
Preheat the oil in a large skillet over medium heat. While the oil is heating, season the pork tenderloin with salt, black pepper, and garlic powder. Cut the tenderloin into 4 equal pieces.

Bread the Pork
Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for bread crumbs. Dredge each piece of pork in flour, dip in the egg, and coat with bread crumbs.

Fry the Pork
Once the oil is hot, carefully add the breaded pork pieces to the skillet. Fry them for about 4-5 minutes on each side or until they are golden brown and cooked through. Remove and drain on paper towels.
Assembling the Sandwich

Prepare the Vegetables
While the pork is frying, wash and dry the lettuce. Slice the tomato into thick rounds.

Assemble the Sandwich
Spread mayonnaise on the inside of each sandwich bun. Place a piece of fried pork tenderloin on the bottom half of each bun. Top with lettuce, a slice of tomato, and pickles. Cover with the top half of the bun.

Serve
Serve the sandwiches immediately while hot, with extra pickles on the side if desired.
