    Prepare the Vegetables

    Chop the onion and bell pepper into small pieces. Set aside.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 5 minutes, or until the vegetables are softened.

    Add Hash Browns and Ham

    Stir in the hash browns and diced ham to the skillet. Spread them out evenly and cook for another 10-12 minutes, stirring occasionally, until the hash browns are golden brown and crispy.

    Sprinkle salt, black pepper, and garlic powder over the hash brown mixture. Stir well to ensure the seasonings are evenly distributed.

    Sprinkle the shredded cheddar cheese over the top of the skillet. Cover the skillet with a lid and let it cook for an additional 3-5 minutes, or until the cheese is melted and bubbly.
