    Prepare the Ingredients

    Finely chop the onion, green bell pepper, and tomato. Crumble the feta cheese and set aside.

    Cook the Gyro Meat

    In a skillet over medium heat, add the gyro meat and cook until heated through and slightly crispy, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté Vegetables

    In the same skillet, add olive oil. Once hot, add the chopped onion and green bell pepper. Sauté for about 3-4 minutes until they are soft.

    Add Tomato and Seasoning

    Add the chopped tomato to the skillet along with salt, black pepper, and dried oregano. Cook for another 2-3 minutes until the tomato is softened.

    Prepare the Eggs

    In a bowl, crack the eggs and whisk them together until well combined. Pour the eggs into the skillet over the vegetables. Allow to cook undisturbed for about 2 minutes.

    Add Gyro Meat and Feta

    Once the eggs start to set, add the cooked gyro meat and crumbled feta cheese on top. Cover the skillet and let cook for another 3-4 minutes until the eggs are fully set.

Serving

    Carefully slide the omelette onto a plate, cut it in half if desired, and serve hot.
