Prepare the Chicken
If not already cooked, grill or pan-fry the chicken breast until fully cooked. Let it cool, then shred or chop into bite-sized pieces.

Chop Vegetables
Finely chop the onion, bell pepper, and tomato. Set aside.

Sauté Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing for about 3-4 minutes until they begin to soften. Add the chopped tomato and continue to cook for another 2 minutes.

Season the Mixture
Sprinkle salt, black pepper, cumin, and chili powder over the sautéed vegetables. Stir well to combine and cook for an additional minute. Remove from heat and mix in the shredded chicken.
Assembling and Cooking Quesadillas

Assemble Quesadillas
Place a tortilla in the skillet over low heat. On half of the tortilla, add a generous amount of the chicken and vegetable mixture, followed by a handful of shredded cheese. Fold the tortilla over to cover the filling.

Cook Quesadillas
Cook the quesadilla for about 3-4 minutes on one side until golden brown and the cheese is melted. Carefully flip the quesadilla and cook for another 3-4 minutes on the other side.

Repeat
Repeat the process with the remaining tortillas and filling until all quesadillas are cooked.
Serving

Slice and Serve
Remove the quesadillas from the skillet and let them cool for a minute. Slice into wedges and serve with your choice of salsa, sour cream, or guacamole.
