In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

Baking the Cake

Preheat Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for about 10 minutes, then turn them out onto a wire rack to cool completely.
Making Cream Cheese Frosting

Prepare Frosting
In a mixing bowl, beat the cream cheese and unsalted butter together until creamy and smooth. Gradually add in the powdered sugar and mix until combined. Finally, stir in the vanilla extract.
Assembling the Cake

Layer and Frost
Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top, then place the second layer on top. Frost the top and sides of the cake with the remaining cream cheese frosting.

Optionally, decorate the top with additional chopped nuts or carrot decorations as desired.
