Crust Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, cubed butter and mix using your fingers or a pastry cutter until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, one tablespoon at a time, mixing gently until the dough comes together. Do not overwork the dough.

    Chill the Dough

    Divide the dough into two equal portions, flatten into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Filling Preparation

    Prepare the Fruit

    Wash and slice the mixed fresh fruit as needed. In a large bowl, combine the fruit with granulated sugar, cornstarch, ground cinnamon, lemon juice, and vanilla extract. Toss gently to coat.

Assembling the Pie

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Roll Out the Crust

    On a floured surface, roll out one disk of dough into a circle to fit your pie pan. Place it in the pie pan and trim any excess dough.

    Pour the prepared fruit filling into the pie crust, spreading it evenly.
