Preparation and Cooking

Prepare the Potatoes
Peel and cut the potatoes into fries. Soak in cold water for at least 30 minutes, then drain and pat dry.

Make the Beer Batter
In a bowl, mix the beer batter according to the package instructions.

Heat the Oil
In a large pot or deep fryer, heat the oil to 350°F (175°C).

Fry the Potatoes
Dip the dried potatoes into the beer batter, then carefully add them to the hot oil. Fry in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Prepare the Garlic Herb Mixture
In a large mixing bowl, combine the roasted garlic, grated parmesan, chopped parsley, chopped thyme, salt, and black pepper.

Toss the Fries
While the fries are still hot, toss them in the garlic herb mixture until well coated.
