    Prepare the Ingredients

    Chop the beef chuck roast into bite-sized pieces and season with salt and black pepper. Chop the bacon, carrots, celery, and potatoes.

    Cook the Bacon

    In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

    Brown the Beef

    In the same pot, add the seasoned beef chuck roast and brown it on all sides. This should take about 5-7 minutes.

    Add Vegetables and Seasoning

    Add the chopped onions, carrots, celery, and garlic to the pot. Sauté for about 5 minutes until softened. Stir in the thyme, bay leaves, and diced tomatoes.

    Add Liquids

    Pour in the milk stout beer and beef broth, scraping the bottom of the pot to deglaze. Bring the mixture to a boil.

    Simmer the Stew

    Reduce heat to low, cover, and let the stew simmer for about 2 hours, or until the beef is tender.

    Add Potatoes and Finish

    Add the cubed potatoes and reserved bacon to the pot. Continue to cook for an additional 30 minutes, or until the potatoes are tender.

    Serve

    Remove bay leaves before serving. Serve hot with a side of Irish soda bread.
