Cook the Bacon
In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

Brown the Beef
In the same pot, add the seasoned beef chuck roast and brown it on all sides. This should take about 5-7 minutes.

Add Vegetables and Seasoning
Add the chopped onions, carrots, celery, and garlic to the pot. Sauté for about 5 minutes until softened. Stir in the thyme, bay leaves, and diced tomatoes.

Simmer the Stew
Reduce heat to low, cover, and let the stew simmer for about 2 hours, or until the beef is tender.

Serve
Remove bay leaves before serving. Serve hot with a side of Irish soda bread.
