Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of the pasta water before draining.

Prepare the Pancetta
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Mix the Egg and Cheese Mixture
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

Combine Pasta and Pancetta
Once the spaghetti is cooked and drained, add it directly to the skillet with the crispy pancetta. Toss to combine.

Add Egg Mixture
Quickly pour the egg and cheese mixture over the hot pasta, tossing rapidly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Season and Serve
Season with additional black pepper and salt to taste. Serve immediately, garnished with extra Parmesan cheese if desired.
