Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C) to prepare for baking the lava cakes.
- 2
Melt Chocolate and Butter
In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
- 3
Mix Eggs and Sugar
In a separate bowl, whisk together the large eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened.
- 4
- 5
Add Flour
Sift the all-purpose flour into the chocolate mixture and gently fold it in until just combined, being careful not to overmix.
- 6
Prepare Ramekins
Grease four ramekins with butter and dust with cocoa powder to prevent sticking. Place the ramekins on a baking sheet for easy handling.
Baking
- 7
Fill Ramekins
Evenly distribute the batter into the prepared ramekins, filling each about 2/3 full.
- 8
Bake
Bake in the preheated oven for about 12-14 minutes, or until the sides are set but the center is still soft and gooey.
- 9
Cool and Serve
Remove the lava cakes from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream on top and fresh berries if desired.
