Prepare the Beef
Season the beef tenderloin with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the beef on all sides until browned (about 3-4 minutes). Remove from skillet and let it cool.

Wrap the Beef
On a clean surface, lay out the prosciutto slices in an overlapping manner. Spread the mushroom duxelles over the prosciutto, then place the beef on top. Roll the prosciutto around the beef tightly and wrap in plastic wrap. Refrigerate for at least 30 minutes.

Bake the Wellington
Place the wrapped beef on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the internal temperature of the beef reaches 130°F (54°C) for medium-rare.

Serve
Let the Beef Wellington rest for 10 minutes before slicing. Serve with the red wine sauce drizzled on top.
