Make or measure simple syrup

If you don't have simple syrup ready, combine equal parts granulated sugar and water (e.g., 1 cup sugar and 1 cup water) in a small saucepan. Heat gently while stirring until the sugar fully dissolves. Cool to room temperature before using. If using pre-made, measure 1 cup.

Measure carbonated water

Chill the carbonated water thoroughly. Measure 4 cups and keep it cold to preserve effervescence.

Combine the simple syrup and citrus juice (if using) in a large pitcher. Stir to blend. Add 4 drops of aromatic bitters if you want a more complex flavor base.

Just before serving, gently fold the chilled carbonated water into the syrup mixture to retain bubbles. Do not stir vigorously.

Flavoring (choose one or mix)

Fruit puree or concentrated syrup

If using fruit puree, strain if you prefer a smoother soda. Measure 1/2 cup puree or syrup and whisk into the syrup base before adding carbonated water. Taste and adjust sweetness — add a bit more simple syrup if needed.

Herb-infused soda

Bruise 6 leaves of fresh herb (mint or basil) by clapping them between your hands or gently muddling. Add the bruised leaves to the syrup base and let steep for 5–10 minutes, then remove leaves before combining with carbonated water to avoid cloudiness.

Vanilla or ginger soda

For cream soda, whisk 1 teaspoon vanilla extract into the syrup base. For ginger soda, add 2 tablespoons ginger syrup to the base and taste for balance.

Garnish & Serving

Fill individual glasses with about 1/2 cup ice (adjust per glass) and pour the soda mixture over the ice slowly to preserve carbonation. Leave some headspace for garnishes.

Garnish each glass with a citrus slice and a sprig of fresh herb. For a professionally finished look, lightly slap the herb sprig between your palms to release aroma before placing it on the drink.

Serve immediately. If making ahead, keep the syrup/flavoring base refrigerated and only add the carbonated water when ready to serve to preserve fizz. Leftover assembled soda will lose carbonation within a few hours.
