Hibiscus Concentrate
Rinse hibiscus
Quickly rinse the dried hibiscus flowers in a fine-mesh strainer under cool running water to remove any dust, then shake off excess water.
Add hibiscus and simmer
Add the rinsed dried hibiscus flowers to the simmering spiced water. Reduce heat to low and simmer gently for 8–10 minutes until the liquid turns a deep ruby red and the flowers have softened.
Sweeten and steep
Remove the saucepan from heat. Stir in the granulated sugar until dissolved, then add the fresh lime juice. Cover and let the mixture steep for 15 minutes to marry flavors and allow solids to settle.
Strain concentrate
Strain the hibiscus mixture through a fine-mesh sieve lined with a double layer of cheesecloth (or a fine sieve) into a heatproof bowl or pitcher, pressing gently on the solids to extract liquid. Discard or compost the solids (or reserve a spoonful for garnish if desired).
Cool
Allow the hibiscus concentrate to come to room temperature, then chill in the refrigerator until cold, about 1 hour. The concentrate can be stored refrigerated in a sealed container for up to 5 days.
To Serve
Dilute to taste
To make a refreshing hibiscus juice, mix 1 part chilled hibiscus concentrate with 3–4 parts cold water for a lightly sweetened drink (adjust dilution to taste). For a fizzy version, use club soda or sparkling water in place of still water, adding it just before serving to preserve bubbles.
Serve over ice
Fill glasses with ice cubes. Pour the diluted hibiscus juice over the ice.
Storage note
Leftover diluted juice is best consumed the same day. Hibiscus concentrate (undiluted) will keep refrigerated up to 5 days; re-stir before using as separation may occur.
