Method
If serving orange juice (fresh-squeezed carafe)
Juicing
Wash 6–8 medium oranges. Halve and juice them using a manual or electric juicer until you have about 4 cups (960 ml) of juice. Strain through a fine mesh sieve into a bowl if you prefer pulp-free juice; otherwise keep the pulp.
Taste the juice. If it seems too strong, stir in up to 1 cup (240 ml) of cold water, adjusting to your preference. If it needs brightening, add 1 tablespoon fresh lemon or lime juice. If you prefer sweeter juice, dissolve 1 teaspoon simple syrup or honey in a little warm water and stir in. Chill briefly if not using ice.
Place 1 cup of ice cubes into a 1‑liter (or 32‑ounce) carafe. Pour the orange juice mixture into the carafe and give a gentle stir. Add 4–6 thin orange slices and 2–3 mint sprigs if using. Serve immediately.
If serving apple juice (carafe)
Using store-bought filtered apple juice
Pour 4 cups (960 ml) of chilled filtered apple juice into the carafe. If the juice is too concentrated, add up to 1 cup (240 ml) cold water to taste.
Using fresh-pressed apple juice
Wash, core (peeling optional), and cut about 6–8 medium apples. Press them in a juicer or run through a high-speed blender then strain through a fine mesh or cheesecloth to yield about 4 cups (960 ml) of juice. Chill or use over ice.
Stir in 1 tablespoon fresh lemon or lime juice if you want brighter flavor, and 1 teaspoon simple syrup or honey if additional sweetness is desired. Add 1 cup ice cubes to the carafe, pour in the apple juice, garnish with thin apple slices and mint sprigs, and serve immediately.
