    Prepare the Walleye

    In a shallow dish, mix the flour, salt, and pepper. In another dish, beat the eggs. In a third dish, combine cornmeal with a pinch of salt.

    Bread the Walleye

    Dip each walleye fillet into the flour mixture, then into the beaten eggs, and finally coat with cornmeal. Set aside on a plate.

    Fry the Walleye

    In a large skillet, heat oil over medium-high heat. Once hot, carefully place the breaded walleye fillets into the oil. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

    Assemble the Tacos

    Warm the corn tortillas in a dry skillet or microwave. Layer each tortilla with cabbage, shredded carrots, a piece of fried walleye, shredded cheese, pico de gallo, and jalapeños.

    Add Boom-Boom Sauce

    Drizzle the boom-boom sauce over the assembled tacos to taste.
