Cooking Instructions
- 1
Prepare the Chicken
In a shallow dish, mix the flour, salt, and black pepper. In another dish, beat the eggs. In a third dish, place the breadcrumbs. Dip each chicken tender first in the flour mixture, then in the egg, and finally coat with breadcrumbs.
- 2
Fry the Chicken
Heat the vegetable oil in a large skillet over medium heat. Fry the chicken tenders for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
- 3
Assemble the Bowl
In a serving bowl, layer the mashed potatoes as the base. Top with corn kernels, followed by the fried chicken tenders.
- 4
Add Cheese and Gravy
Sprinkle shredded cheese over the top of the chicken, then generously pour Grandma Pennie's gravy over the entire bowl.
