    Prepare the Vegetables

    Dice the green and red bell peppers and onion into small pieces.

    Cook the Sausage

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced andouille sausage and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the diced onions, green pepper, and red pepper. Sauté until the vegetables are soft, about 5 minutes.

    Prepare the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper.

    Make the Omelet

    Pour the egg mixture into the skillet over the sautéed vegetables. Allow it to cook undisturbed until the edges start to set, about 2-3 minutes.

    Add Sausage

    Once the edges are set, sprinkle the cooked andouille sausage over one half of the omelet. Fold the other half over the sausage and let it cook for another 1-2 minutes until fully set.
