Marinade

Method

Preparation and Cooking

  1. 1

    Marinate the Steak

In a bowl, mix olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add the flank steak, ensuring it is well coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.

  2. 2

    Grill the Steak

Preheat the grill to medium-high heat. Remove the steak from the marinade and grill for about 4-6 minutes on each side for medium-rare, or until desired doneness. Let the steak rest for 5 minutes, then slice thinly against the grain.

  3. 3

    Sauté the Vegetables

In a skillet over medium heat, add a splash of olive oil. Sauté the sliced onions and bell peppers for about 5-7 minutes until they are softened and slightly charred.

  4. 4

    Assemble the Tacos

Warm the taco tortillas on the grill or in a dry skillet. Fill each tortilla with sliced steak, sautéed peppers, and onions. Top with pico de gallo.

  5. 5

    Serve

Serve the tacos alongside chips, salsa, and queso for dipping.
