    In a skillet over medium heat, cook the breakfast sausage until browned, about 5-7 minutes. Remove and set aside. In the same skillet, cook the bacon until crispy, about 5 minutes. Drain on paper towels.

    Prepare tater tots according to package instructions, either baking or frying them until golden and crispy, about 20 minutes.

    In a bowl, whisk the eggs. Pour into the skillet used for the meats and cook over medium heat, stirring occasionally, until fully cooked, about 5-6 minutes.

    Assemble the Burritos

    Lay a large tortilla flat and layer with cooked sausage, bacon, tater tots, scrambled eggs, shredded cheese, and a generous drizzle of queso. Roll tightly and repeat with remaining tortillas.

    In a small bowl, mix the sour cream with sriracha sauce until combined. Adjust sriracha to taste.
