    Prepare the Vegetables

    Start by washing and preparing all the vegetables. Slice the bell pepper and julienne the carrots. Cut the baby bok choy in half, and separate the broccoli and Chinese broccoli into florets.

    Cook the Noodles

    Boil water in a pot. Add the crispy egg noodles and cook according to package instructions until tender but firm. Drain and set aside.

    Sauté the Vegetables

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the carrots, bell pepper, broccoli, Chinese broccoli, bamboo shoots, and baby bok choy. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.

    Add the Sauce

    Pour in a light brown sauce (you can use a pre-made sauce or make your own with soy sauce, sugar, and a little cornstarch to thicken). Stir well to coat the vegetables and let simmer for another 2-3 minutes.

    Add the cooked crispy egg noodles to the skillet, tossing everything together to combine well. Cook for an additional minute to let the noodles absorb some of the sauce.
