Preparation of Hot Chili Oil

    Make the Hot Chili Oil

    In a small saucepan, heat the olive oil over medium heat. Add the dried red chili flakes and sauté for about 2 minutes until fragrant. Remove from heat and let it cool.

Cooking the Shrimp

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of the hot chili oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until the vegetables are softened.

    Add Garlic and Shrimp

    Stir in the minced garlic and shrimp. Cook for about 3-4 minutes until the shrimp turn pink.

    Add Coconut Milk

    Pour in the coconut milk and bring to a simmer. Stir in the fresh basil leaves and cook for another 2-3 minutes until everything is heated through. Add salt to taste.

Serving

    Serve Over Rice

    Serve the spicy shrimp coconut over cooked jasmine rice. Drizzle with additional hot chili oil if desired.
