    Prepare the Jasmine Rice

    Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice with 4 cups of water. Bring to a boil, then reduce to low heat, cover, and simmer for about 15 minutes until the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    Cook the Protein

    In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant. Add the chicken, shrimp, squid, or tofu to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the protein and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onions, bell peppers, and jalapenos. Sauté for about 3-4 minutes until the vegetables are tender-crisp.

    Combine and Season

    Return the cooked protein to the skillet with the vegetables. Sprinkle with salt and black pepper, and stir-fry for another 1-2 minutes until everything is well combined and heated through.

    Serve the salt and pepper mixture over the prepared jasmine rice. Enjoy!
