    In a large pan, heat the vegetable oil over medium heat. Add the sliced onions and sauté until translucent.

    Add the bell peppers and carrots to the pan, stirring occasionally for about 5 minutes until they soften.

    Incorporate Curry Paste

    Stir in the Panang curry paste and cook for another 2 minutes until fragrant.

    Add Coconut Milk

    Pour in the coconut milk and add the kaffir lime leaves. Bring to a gentle simmer.

    Add soy sauce, sugar, and salt to taste. Simmer for an additional 10 minutes, allowing the flavors to meld.

    Finish with Basil

    Remove from heat and stir in the basil leaves just before serving.
