    Prepare the Jasmine Rice

    Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine 1 cup of rice with 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for another 10 minutes.

    Sauté Vegetables

    In a large pot, heat vegetable oil over medium heat. Add the chopped onions and sauté until translucent. Then add diced potatoes and sliced carrots, cooking for about 5-7 minutes until they begin to soften.

    Add Peppers and Curry Paste

    Stir in the chopped bell pepper and massaman curry paste, cooking for an additional 2-3 minutes until fragrant.

    Combine Coconut Milk and Peanut Butter

    Pour in the coconut milk and add the peanut butter. Stir well to combine and bring the mixture to a simmer.

    Simmer the Curry

    Add water, and season with salt to taste. Let the curry simmer for about 15-20 minutes until the vegetables are tender and the flavors meld together.

    Serve

    Serve the massaman curry over jasmine rice and top with crushed peanuts.
