Make the Dumpling Dough
In a large bowl, combine all-purpose flour and water. Knead until the dough is smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In another bowl, mix ground chicken, chopped green onion, grated ginger, soy sauce, salt, and pepper until well combined.

Form the Dumplings
Roll out the rested dough on a floured surface to about 1/8 inch thick. Cut out circles using a cookie cutter or glass. Place a teaspoon of the filling in the center of each circle, fold the dough over, and pinch to seal.

Cook the Dumplings
In a large pot, bring the chicken broth to a boil. Carefully add the dumplings and reduce the heat to simmer. Cook for about 5-7 minutes or until the dumplings float to the top.

Add Bok Choy
Stir in the chopped baby bok choy and cook for an additional 2-3 minutes until wilted.

Serve
Taste the broth and adjust seasoning with salt and pepper as needed. Serve hot.
