    Prepare the Rice

    Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Prepare the Chicken

    While the rice is cooking, slice the chicken breast into thin strips. Season with salt and black pepper.

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of hot chili oil over medium heat. Add the diced onion and bell pepper, and sauté until they are softened, about 5 minutes. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Cook the Chicken

    Push the vegetables to one side of the skillet and add the chicken strips to the other side. Pour in the remaining hot chili oil and cook the chicken until browned and cooked through, about 7-10 minutes. Stir everything together.

    Add Basil

    Tear the fresh basil leaves and add them to the skillet. Stir everything well and cook for another minute until the basil is wilted.

    Serve

    Serve the chili chicken basil hot over a bed of jasmine rice.
