    Prepare the Dry Rub

    In a bowl, mix together paprika, garlic powder, onion powder, cayenne pepper, black pepper, salt, and brown sugar until well combined.

    Season the Chicken Wings

    Pat the chicken wings dry with paper towels and then rub the dry rub all over the wings, ensuring they are evenly coated. Let them sit for at least 30 minutes to absorb the flavors.

Cooking

    Smoke the Chicken Wings

    Preheat your smoker to 225°F (107°C). Place the seasoned chicken wings on the smoker rack and smoke for about 1.5 to 2 hours or until they reach an internal temperature of 165°F (74°C).

    Prepare Alabama White Sauce

    While the wings are smoking, mix together mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, black pepper, and salt in a bowl until smooth. Adjust seasoning to taste.

    Once the wings are done smoking, remove them from the smoker and toss in your favorite hot sauce before serving.
