Make the Pasta Dough
In a large bowl, mix flour and salt. Create a well in the center and add eggs and olive oil. Gradually mix flour into eggs until a dough forms. Knead for 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Roll Out the Pasta
After resting, divide dough into 4 pieces. Roll each piece through a pasta machine or with a rolling pin until thin. Cut into desired shape (fettuccine, tagliatelle, etc.).
Bolognese Sauce

Cook the Vegetables
In a large skillet, heat olive oil over medium heat. Add onion, carrot, and celery. Sauté for 5-7 minutes until softened. Stir in garlic and cook for another minute.

Brown the Beef
Add ground beef to the skillet. Cook until browned, breaking it apart with a spoon (about 8-10 minutes). Drain excess fat.

Simmer the Sauce
Stir in crushed tomatoes, tomato paste, red wine, oregano, salt, and pepper. Bring to a simmer, reduce heat and cook for 30-40 minutes, stirring occasionally.

Cook the Pasta
Bring a large pot of salted water to a boil. Add fresh pasta and cook for 2-4 minutes until al dente. Drain and reserve some pasta water.

Combine and Serve
Toss the pasta with the Bolognese sauce, adding reserved pasta water as needed for desired consistency. Serve topped with grated parmesan, breadcrumbs, and fresh basil.
