Method

Pasta Preparation

  1. 1

    Make the Pasta Dough

In a large mixing bowl, combine the flour and salt. Create a well in the center and crack the eggs into the well. Using a fork, gradually mix the flour into the eggs until a dough begins to form. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic and let it rest for at least 30 minutes.

  2. 2

    Roll Out the Dough

After resting, divide the dough into four pieces. Roll each piece out using a pasta machine or a rolling pin until thin. Cut into your desired pasta shape (fettuccine, tagliatelle, etc.). Dust with flour to prevent sticking.

Red Sauce Preparation

  1. 3

    Cook the Sauce

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the crushed tomatoes, basil, oregano, salt, black pepper, and red pepper flakes. Simmer for 20 minutes, stirring occasionally.

Combining and Serving

  1. 4

    Combine Pasta and Sauce

Bring a large pot of salted water to a boil. Add the fresh pasta and cook for 3-4 minutes until al dente. Drain the pasta and toss it with the red sauce. Serve immediately, garnished with grated Parmesan and chopped fresh basil.
