Pasta

Method

Pasta Preparation

  1. 1

    Make the Dough

In a large bowl, mix the flour and salt. Make a well in the center and crack the eggs into it. Gradually mix the flour into the eggs until a dough forms.

  2. 2

    Knead the Dough

Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

  3. 3

    Roll Out the Pasta

After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin. Cut into your desired shape.

Meaty Tomato Sauce Preparation

  1. 4

    Cook the Meat

Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant. Add the ground beef and cook until browned.

  2. 5

    Add Tomatoes and Seasoning

Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Let the sauce simmer for 20-25 minutes, stirring occasionally.

Combine and Serve

  1. 6

    Cook the Pasta

In a large pot of boiling salted water, cook the fresh pasta for 2-4 minutes until al dente. Drain and reserve a bit of the pasta water.

  2. 7

    Toss Together

Add the cooked pasta to the sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to loosen it.

  3. 8

    Serve

Plate the pasta and sauce, and serve immediately with grated Parmesan cheese on top if desired.
