Method

Preparing the Catfish

    Marinate the Catfish

    Soak catfish fillets in buttermilk for at least 30 minutes in the refrigerator.

    Coat the Catfish

    In a shallow dish, combine cornmeal, flour, salt, black pepper, paprika, and cayenne pepper. Remove catfish from buttermilk and dredge in the cornmeal mixture until well coated.

    Fry the Catfish

    Heat vegetable oil in a deep skillet over medium-high heat. Fry catfish fillets for 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Making the Grits

    In a saucepan, bring water and salt to a boil. Stir in stone ground grits, reduce heat to low, and cook for about 20-25 minutes, stirring occasionally until thickened.

    In a small bowl, mix melted butter with hot sauce until well combined.
