Method
Preparing the Catfish

Marinate the Catfish
Soak catfish fillets in buttermilk for at least 30 minutes in the refrigerator.

Coat the Catfish
In a shallow dish, combine cornmeal, flour, salt, black pepper, paprika, and cayenne pepper. Remove catfish from buttermilk and dredge in the cornmeal mixture until well coated.

Fry the Catfish
Heat vegetable oil in a deep skillet over medium-high heat. Fry catfish fillets for 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Stir in butter until melted and creamy. Adjust seasoning if necessary.

Mix the Coleslaw
In a large bowl, combine shredded cabbage and carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour dressing over the cabbage mixture and toss to coat.
Making Hot Sauce Butter

In a small bowl, mix melted butter with hot sauce until well combined.
