Catfish

Method

Catfish Preparation

  1. 1

    Prepare the Breading

In a shallow dish, combine cornmeal, all-purpose flour, Cajun seasoning, salt, and black pepper.

  2. 2

    Soak the Catfish

Dip each catfish fillet into buttermilk, allowing excess to drip off, then dredge in the cornmeal mixture, ensuring each piece is well-coated.

Frying Catfish

  1. 3

    Heat the Oil

In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 4

    Fry the Catfish

Carefully add the coated catfish fillets to the hot oil, cooking for about 4-5 minutes on each side or until golden brown and cooked through.

  3. 5

    Drain the Catfish

Remove the catfish from the skillet and place on a paper towel-lined plate to drain excess oil.

Fries Preparation

  1. 6

    Prepare the Potatoes

Peel and cut russet potatoes into fries, about 1/4 inch thick.

  2. 7

    Soak the Fries

Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Frying Fries

  1. 8

    Heat the Oil for Fries

In a separate pot, heat vegetable oil to 350°F (175°C).

  2. 9

    Fry the Fries

Fry the soaked and drained fries in batches for about 4-5 minutes or until golden and crispy.

  3. 10

    Drain the Fries

Remove fries from the oil and drain on paper towels. Season with salt while hot.

Serving

  1. 11

    Plate the Dish

Serve the crispy catfish with the fries on the side. Optionally, add tartar sauce or lemon wedges.
