Crab Cakes

    Prepare the Mixture

    In a large bowl, combine the crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, old bay seasoning, egg, green onions, salt, and black pepper. Mix well.

    Form the Cakes

    Gently fold in the panko breadcrumbs until fully combined. Form the mixture into patties, about 2-3 inches in diameter.

    Cook the Cakes

    Heat olive oil in a skillet over medium heat. Cook the crab cakes for about 4-5 minutes on each side, or until golden brown. Remove and set aside.

Creamy Polenta

    Cook the Polenta

    In a saucepan, bring water to a boil. Slowly whisk in the polenta and reduce heat to low. Cook for about 15-20 minutes, stirring frequently.

    Add Cream and Cheese

    Once the polenta is thickened, stir in the heavy cream, Parmesan cheese, butter, and salt until creamy and smooth.

Ratatouille

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant. Then add eggplant, zucchini, and bell pepper. Cook for about 5-7 minutes.

    Stir in crushed tomatoes, salt, and black pepper. Cook for an additional 10-15 minutes until vegetables are tender. Finish with fresh basil.
